As a busy working mom I often try to fix a simple, quick yet nutritious meal for my family at dinner time. This spicy, colorful and delicious punjabi egg curry is one of our favorite dishes! I often make the curry paste using tomato puree, chopped onion and ginger garlic paste by @shanfoodsglobal ! 1 tbsp of this paste just elevates the flavor so much. I always make a larger batch of the curry paste and freeze it to for another dish ( like paneer, beans or even tofu curry)
